Works for Me Wednesday: 01/26/2011!

I know that this post is a little past due, with Christmas being over, however, I personally like to prepare for Christmas all year long.  Christmas is by far my favorite holiday as it gets celebrated for the entire month, and there is so much to do and see and plenty of opportunities to see and visit with family.  Through out the year Joe and I occasional purchase candies after holidays on sale.  Joe has a serious sweet tooth, so that is how I keep his cravings at bay, and our budget in-tacked.  :-)  Below is an empty carton from Gertrude Hawk.  I purchased the Paula Dean gift tags at Micheal's last year on clearance, for about $0.75 ea.  Tacky glue is something that all crafters should have on hand at all times.  I try not to be a waster, and when I come across things that I think new life can be given to, I do.  Here is what I came up with...
I glued a holiday gift tag over the front candy label of the box, and made a really adorable cookie holder.  I gave away several of these this past Christmas, and everyone really thought they were adorable!

Menu Plan Monday: January 24th, 2011!

I am still recovering from my head cold, that I think is now slowly working it's way into my chest - UGH!  I'm ready for Spring, any one else?  Any way, Joe has a dr's appt on Thursday I need to take him to, I have working to do, and I have started my online medical transcription class, which is a LOT harder than I thought it would be.  Greek and Latin are definitely not anything that I studied as an English major in college, so it's all Greek to me, literally!  ;-)  I think the transcription part will be easier for me than the medical, but we'll see...  So, what are we going to eat this week, refrigerator leftovers, meals that were planned and not eaten last week, and other simple tid-bits, like...

Breakfasts: Cold or Hot Cereal for me, Bagels and Fruit Smoothies for Joe

Lunches: Tuna or Ham and Cheese or PB&J Sandwiches with the occasional leftover mixed in

Dinners:
Sunday - French Toast
Monday -  Apple Bees take-out (with a gift card or course)
Tuesday - Broiled Parmesan Tilapia with Jasmine Rice and Steamed Broccoli

Menu Plan Monday: January 17th, 2011

This week will hopefully just fall into place.  I am finally starting to feel better!  I do have a few errands that need to be run this week as well as meetings to attend, so hopefully I will continue feeling well through the week.  Joe and I have also gotten a jump start on some of our spring cleaning, and we are still filling flea market boxes with stuff to sell!  Here's what's cooking this week...

What are we Eating during the Pantry Challange?

Some people might be thinking that it is crazy to eat only what you have in your pantry, but not really.  We've been eating very well, despite the fact I made no menu plan this week - UGH!  Joe and I have been creative in cleaning the fridge out.  One night I made this delicious pasta salad using leftover mini bow-tie pasta from the fridge.  I scoured the cupboards and found a jar of marinated artichoke hearts, canned mushrooms, home-canned diced tomatoes, and some Italian dressing mix.  I also grabbed some diced bell pepper from the fridge and some sliced pepperoni.  Toss it all together (using the marinade from the artichokes as the dressing), and you have a wonderful, easy side dish that even Joe loved :-)
I had also baked a buffalo marinaded and a fajita marinaded chicken breasts at the beginning of the week.  Two chicken breasts made Joe and I each a large salad, 4 quesdillas (spelling?), and 8 pizza pockets (not all at one time of course)!  And we were not starving or anything, we had plenty to eat.  This week a menu plan is definitely in order, however, I'm not to worried if I stray from it as long as we eat from the freezer and pantry, that's what's really important.  How is everyone else doing in their freezer/pantry challenge?

    Menu Plan Monday: Jan 3, 2011!

    The first Menu Plan Monday post of the year!  This will hopefully be a year full of blessings and good food for all!  For the month of January we are also doing an 'Eat from the Pantry Challenge.'  This will help us to start the year off with saving money as well as a clean freezer and pantry!

    We had a WHITE CHRISTMAS!!!

    I know that this is a little late, but I just wanted to post this beautiful picture my husband took on Christmas.  This year's theme at the museum was 'Holiday Homecoming 1865', so the tent you see is a Civil War tent.
    I'm so glad that we got a white Christmas, they are beautiful!
