Tempt Your Tummy Tuesday: Cake Mix Cookies

Yellow Cake Mix + White Chocolate Chips
I make a most of my recipes from scratch, but there are just sometimes that you need a special treat quickly.  For those times, I always keep a couple cake mixes on hand to make Cake Mix Cookies!  Very quick, and delicious!  I have used chocolate cake mix with M&M's, yellow cake mix frosted with homemade chocolate butter cream frosting, and Joe's favorite, confetti cake mix with white chocolate chips.  The possibilities are endless, so you can easily use what you have on hand.

1-18 oz Cake Mix (any flavor, you could probably use homemade also)
1 Egg
1/2 C Softened Butter
1 C Mix-in's (Candies, Morsels, Nuts, etc)
(if using a Chocolate Cake Mix, add 2 tbsp Water also)
  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients, except mix-in's together in a bowl until a soft dough forms.  Add mix-in's and mix by hand to evenly distribute them.
  3. Scoop dough onto cookie sheets (I use a baking stone, works great) by rounded tablespoons.
  4. Bake 12-15 minutes (depending on oven), or until cookies are slightly browned on edges.
  5. Let sit on cookie sheet to cool 5 minutes before moving to cooling rack to cool completely.
  6. Enjoy!

I am a very lucky girl this week, because I have almost no cooking to do - wahoo!  With picnics Monday, working at Joe's Grandfather's on Wednesday, and a graduation party to attend on Saturday, plus leftovers, I don't have to plan too much.  :-)

Dinners:
Sunday - Leftover Zuppa Tuscana Soup and Bread
Monday - Family Picnic (hotdogs, coleslaw, taco dip/tortilla chips, onion dip/chips, Jell-o poke cake, and homemade Mac and Cheese!)
Tuesday - Leftover Picnic Food - yum-o!
Wednesday - Working at Joe's Grandfather's house, we'll probably end up at Applebee's or Chili's with him
Thursday - Cheesy Baked Pork Chops, Baked Potatoes, and Veg.
Friday - Chipped Beef Gravy with Pancakes
Saturday - Graduation Party!

Frugal Finds Friday: Saving/Repurposing Tomato Juice


I started making my own salsa a few months ago, with each batch taking 1 large can of drained whole tomatoes.  Being the frugal person I am, I couldn't just toss that free tomato juice down the drain!  So, I save it.  I measure it out; each can holds about 1 cup.  I pour the tomato juice into a zip-lock bag or a ball freezer jar, label, and wait until I need it for something.  I've drank the juice, as you would V8, very tasty.  I've also added it to beef stew, chili, vegetable soup, and cooked ground beef in it.  It gives these meals a little punch of extra flavor!

Tempt your Tummy Tuesday: Cheesy Baked Pork Chops


These cheesy baked pork chops are super simple, and are something a little different to have for dinner.  This recipe only requires a few ingredients, and can be ready in as little as 20 minutes depending on the size of your pork chops.  Here's what you'll need:
  • Pork Chops, boneless or bone-in, your choice
  • Seasoning (I use a homemade seasoning blend, but regular seasoning salt works just fine too)
  • Sour Cream (about 1 tsp per pork chop)
  • Shredded Cheese (I have used both the Mexican Blend and Mild Cheddar, both very yummy!)
  1. Preheat oven to 350 degrees F.  Place pork chops in foil-lined baking sheet.
  2. Cover each pork chop with about 1 tsp sour cream.
  3. Sprinkle each pork chop with Seasoning.
  4. Sprinkle a good-sized pinch of cheese over each pork chop.
  5. Bake pork chops in preheated oven 15-35 minutes depending on thickness/bone.  My bone-in ones a on the thinner side, but with the bone, they still take about 30 minutes, just an fyi).  These are delicious served with salad and rice or buttered noodles, or even baked potatoes and steamed broccoli.  In other words, they are totally yummy, and you should make them for dinner, like, tonight :-)

This week Joe and I are getting ready for another event here at the museum, we are going to work at Joe's grandfather's house one day, and bring up a few things to sell this weekend, hopefully.  I also have some mending to do, and a little cleaning as well.  Here's what's on the menu for this week...

Tempt Your Tummy Tuesday: White Chocolate Chip Banana Bread

 One of my favorite uses for too-ripe bananas has always been banana bread.  However, there was a spurt a few years ago when I was making it like every other week.  SO, to spice things up a little bit, I decided to swap the nuts in the recipe for white chocolate chips.  The results, totally dreamy!

 Ingredients:
  • 2-3 large ripe Bananas
  • 1/3 c Margarine or Butter
  • 2/3 c Sugar
  • 2 Eggs
  • 2 c Flour (unbleached or all purpose or even whole wheat, or a combination of these)
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 c Buttermilk (which I never have, so I mix a good-sized tbsp sour cream, with some milk together to make 1/2 c)
  • 1/2 bag White Chocolate Morsels (approx. 1 c)
Directions:
  1. Preheat oven to 350 degrees.
  2. Puree Bananas.  Add butter, sugar, buttermilk (or sour cream mixture) and eggs.  Mix together until well blended.
  3. Separately combine flour, with baking powder and soda.  Add this to the banana mixture a third at a time until all is well blended.
  4. Stir in white chocolate morsels.
  5. Pour into greased loaf pan and bake 40-55 minutes in preheated oven until golden brown and cooked through.  (I pour 1/2 the batter into two Pyrex loaf pans, which yields a flatter loaf, but bakes quicker, and gives me one for now, and one for the freezer for later)
  6. Cool completely on wire rack.
  7. Serve bread with a glass of milk and try not to eat the whole loaf all by yourself :-)

Last week was kinda crazy with everything going on here at the museum, but we made it through, and were able to get rid of some excess stuff over the weekend as well, and make a little cash money!  Always a good thing.  We are going to Joe's grandfather's house sometime this week to get things in the suburban switch, and ready for the next 'show.  I also plan to get some little projects done around the house this week.  Here's what's on the menu for this week...

Extras: Over the weekend I baked a Pineapple Upside-down Cake which we got half of, and two Apple Crumb Pies which I kept one of, so we have plenty of sweets for this week :-)

    Frugal Finds Friday: Re-using Plastic Bags


    Ziplock bags are meant to be disposable, but I have found that they can in fact be reused.  This saves me money, and keeps some plastic out of the landfill.  Now, I don't reuse all of my freezer bags, especially if they had something gross in them, like raw meat, but I do use most of them at least twice.  My Garlic Bread is wrapped in aluminum foil before being put is a gallon sized freezer bag, so nothing actually touches the bag, same thing with frozen cookie dough (which I wrap in waxed or parchment paper).  Those bags, I don't even wash in between uses.  Bags with say slice asparagus, or cooked pinto beans, or sliced flash-frozen fruit, I wash inside and out with a sponge, and warm soapy water.  Then I turn them inside-out, and upside-down, and clip them onto a skirt hanger and hang them near my kitchen window to dry.

    Tempt Your Tummy Tuesday: Cheese Steak Egg Rolls

    Cheese Steak Egg Rolls are a simple recipe made with real, natural ingredients, but are definitely an indulgence.  They are good for when you want something greasy and 'fattening,' but don't want to feel all bloated and gross afterwards.  They are one of my husband's favorites, and I like them pretty well myself too.  Here's the lowdown...

    1 c sliced Onions
    2 Rib Eye Steaks, sliced thin (I have used flat irons, which are cheaper at my grocery store, also, I have made this using 1/2 of a flat iron and a small can of mushrooms, and it still made 9 egg rolls, just an fyi)
    Egg Roll Wrappers
    6-8 oz Provolone Cheese (I have used 1/2 of a provolone slice on each egg roll, but you can use shredded mozzarella also, it's just not as tidy)
    Cooking Spray (I use Olive Oil in my refillable sprayer)
    Optional Sliced Peppers or Mushrooms

    1.  Preheat Oven to 400 degrees F.  Spray baking sheet with cooking spray*.
    2.  Cook steak strips with onions (and mushrooms/peppers if using) in skillet until no longer pink, and vegetables or softened.
    3.  Add steak/vegetable filling into an egg roll wrappers (I put a hefty tablespoon in each one), and 1/2 slice provolone cheese (or a decent pinch of shredded mozzarella).  Use water to moisten the edges of the wrapper, wrap up your egg roll, and place on the baking sheet.  Repeat until you have used all of the filling.
    4.  Spray your egg rolls with cooking spray (this makes them nice and crispy), and bake 15 minutes.
    5.  I like to serve mine with a little mayo mixed with A1 sauce, but you could whip up a BBQ sauce if you wish; kids would probably like it with pizza sauce or ketchup.  Serve Immediately, and try not to eat them all, they're pretty good!  Refrigerate leftovers, if there are any :-)
    *I bake mine on a stone, so I just spray each roll all over with olive oil, and then place it on the stone
