I 'liked' Green Mountain Coffee on Facebook a little while ago to receive a FREE bag of coffee, and the other day, much to my surprise, I not only received a FULL-SIZED bag of coffee, but a travel mug and a sticker!

Tempt your Tummy Tuesday - Cheesy Salsa Mini Meatloaves!

I made these delicious little devils this past week, and not only were they simple, but absolutely wonderful tasting!

Ingredients:
  • 1 lb Ground Beef
  • 1/2 c Finely chopped Onions
  • 1 Egg
  • 12 Saltine Crackers finely crushed (approx 1/2 c)
  • 1 1/2 c Shredded Cheese (Mexican blend, or whatever your favorite is), divided
  • 1 c Salsa, divided
Combine all ingredients in bowl
Spray muffin tin with cooking spray
Mix all ingredients together thoroughly using fingers!
Press meat mixture into each muffin cup, so each is approx 2/3's full.
Bake in preheated oven @ 400 degrees for 20-25 minutes or until cooked through. 
Serve mini meatloaves with Mexican rice and salad, or any other favorite side dishes and veggies!
Makes 12 mini meatloaves, and these freeze beautifully!

Menu Plan Monday Oct 25th 2010

This will hopefully be the last crazy week until the holidays!  This is the last week for Joe's physical therapy, we both have multiple doctors appointments before we lose insurance the end of the month, plus there are errands that need to be run, and I work this Tuesday and Friday as well!  Like I said busy and CRAZY!  But, we still have to eat, so here's what cooking this week...

Tempt My Tummy Tuesday - Banana Chocolate Chip Muffins!

This is my first Tempt my Tummy Tuesday post - YEAH!  I took my regular Banana bread recipe and added chocolate chips to it and made muffins, which are oh so yummy!  Here's the recipe...
 Ingredients:
  • 2-3 large ripe Bananas
  • 1/3 c Margarine or Butter
  • 2/3 c Sugar
  • 2 Eggs
  • 2 c Flour (unbleached or all purpose or even whole wheat, or a combination of these)
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 c Buttermilk (which I never have, so I mixes some sour cream and milk together to make 1/2 c)
  • 1/2 bag Chocolate Morsels (approx. 1 c)
Directions:
  1. Preheat oven to 350 degrees.
  2. Puree Bananas.  Add butter, sugar, buttermilk (or sour cream mixture) and eggs.  Mix together until well blended.
  3. Separately combine flour, with baking powder and soda.  Add this to the banana mixture a third at a time until all is well blended.
  4. Stir in chocolate morsels.
  5. Pour into greased muffin cups and bake 15-20 minutes* in preheated oven until golden brown and cooked through.
  6. Cool completely on wire rack.
  7. Serve muffins with butter and a glass of milk and try not to eat them all by yourself :-)
*If you prefer to make a loaf of bread, bake approx. 55 minutes depending on your oven.
