The Final week in the Official Eat From the Pantry Challenge

Well, the ballots are in and tallied, and it seems that we went over budget for the month, but only by $0.09, so I am SO OKAY with that :-) Even though this is the final week in the 'Official' Eat from the Pantry Challenge, our challenge will continue through February. Joe and I are going on a stock-up mission on Monday for some basics that we are out of (cat food, litter, flour, sugar, etc), and then we will have a set budget again for February to see if we can completely clean out our 2 freezers!!!! I will be super excited if we can accomplish this!!!
Totals for Week #4:
Food - $3.29
Health & Beauty - $5.34
Household - $2.12
Total: $10.75 - $10.66 remaining budget = $0.09 Over! (But I still think that we did a wonderful job!)
Eating Out: (different budget, but I'll share anyway) $6.78 for 1 lunch out at BK for Joe and I.

A Delicious One-pot Meal using a.... Rice Cooker?!


This was dinner today, and it was all made in one pot, the rice cooker to be exact. Jasmine rice was cooking in the bottom of the rice cooker, while the foil wrapped Salmon and broccoli florets steamed in the steamer tray. I think it all turned out beautifully! My rice cooker is quickly making it's way up to the top spot in most used appliances :-) We also had fresh spinach with some red onion dressed with the same homemade dill sauce that is on the Salmon. The cookies are fresh today too; a delicious dessert that should last until the end of next week, maybe, Joe is in the house you know..... ;-)

Eating from the Pantry Challenge Week #3

So, week #3 went VERY well in regards to eating from the pantry and not out, as well as using up items in our stockpiled cub boards. :-) We're getting there, but I'm thinking after a much needed trip for the basics (sugar, flour, cat food) after week four, we should be able to continue the challenge through February! I'm excited to actually see the back walls of my freezers again...

Menu Plan Monday!!!

This week we are still eating from our pantry as the 'Eat from the Pantry challenge' is still on!!! This is how this week goes...

Lunch: Leftovers, PB&J, or Chicken Salad (that my mommy made for us) Sandwiches

Sunday - Chicken, broccoli, tomato Alfredo with salad and garlic bread
Monday - We were suppose to have pancakes and chipped-beef gravy with homemade applesauce for dinner, but Joe got sick and has been admitted to the hospital, because there seems to be a larger problem then we thought :-( So we'll just add this in for breakfast or lunch later in the week when he feels better.

Now, this is what I call left-overs!!!


I know what you are thinking, 'eewww, leftovers.' My husband was the same way when I first met him. However, it isn't leftovers that are gross, it is usually how they are prepared, and I prepare GREAT leftovers, or at least that's what I'm told! :-) Using up leftovers is one of the key principles of being frugal; wasted food you got really cheap or free is still wasted food. I always try to plan my meals around what's in the pantry, freezer, etc, but I also try to keep the fridge cleaned out as well. Tonight I took leftover pasta (Joe and I never eat a whole box, so I just keep it in a jar until we need it), leftover steamed broccoli, and then I added some Alfredo sauce, cooked chicken from the freezer, and a can of diced tomatoes, and I got this pasta creation -- very DELICIOUS!!! Add some leftover salad and garlic bread from the other night, and you have dinner.

I stopped into Rite-Aid on Saturday, since I was right next door, and got the SCR deals for the week...
