Before I had to become frugal, I threw away a lot of food: leftovers past their prime, last night's dinner that wasn't as tasty as I thought it would be, pantry staples I'd let expire before I got to use them. Then money got tight, and I realized I was wasting good food, and that was costing me money, and that was not good. My husband wasn't really into leftovers, while I had eaten them my whole life. So, in an effort to save money, but not serve the same meal all over again, I learned to 're-invent' leftovers. Leftover sauce and noodles, became pizza and pasta salad, taco meat became nachos, and leftover baked potatoes, hash browns. So, if you have some left over baked potatoes, you could make this...
1. Peel (on not, your choice) leftover potatoes, dice. Also peel and dice 1 small-medium onion.
2. I use a large cast iron skillet, but any pan would work. Add oil (I use lard) to your skillet, and heat it up. Add the potatoes and onions.
3. Saute the potatoes and onions, until the potatoes are nicely browned, and the onions are translucent. I serve mine with eggs, toast, and sometimes bacon or sausage, as dinner. I like mine with ketchup, as you can tell from the picture, my husband likes to put A1 on them, but it's really up to you! Enjoy!
